HERRING marinated with cream
4 salted herring + 4 onions
2 sweet and sour pickles
1tasse ¾ heavy cream
¼ cup vinegar
1 bay leaf
s.q. mustard seed
Salted herring soak for 24 hours. in water.
Cut their head and tail, incise these fish in the direction of the length of the dorsal side to remove ridges and inner skin and thoroughly clean them.
Peel the onions, slice them and the sweet and sour pickles
Add the heavy cream, vinegar, bay leaf, mustard seeds and peppercorns.
Mix gently and pour this mixture in a large airtight ravier pvc cover glass then dip the fillets of herring by spreading them well and let stand 24 hours. before serving.
Accompany this dish apple earth or simply in shirt with white bread.
